I tried this knife sharpener and had high hopes for it. Unfortunately, I get a better edge on my knives with a sharpening stone. I expected the edge to be superior to the edge I got with the stone but it wasn't. However, it did everything it was supposed to and was easy to use. The blade is held in place at the proper angle automatically. I was simply disappointed with the end result when comparing it to the edge I obtain on my own with the stone.

My knifes get alot of use. It always took me along time to sharpen them by hand. The Chefs Choice 120 sharpened 12 knifes, in less then 10 minutes, better then I ever did. Great Product, Great Results, Great Price.

Have only used it once but it put a great edge on the knifes I sharpened. know I will use this a lot as knifes go dull.

I got this recently for my birthday, and I am almost giddy with the results. I started with a small pocket knife to practice, and once I got my technique down, I moved on to my Henckel knives. In just a few minutes, each one was like new. I have requested that a relative (who shall remain anonymous) bring me her knives, which were sharpened with the best of intentions on a bench grinder, so that I can bring them back to life.
Although there is a significant price difference (my only criticism), I am glad I got the three stage model, as the stropping disc brings a knife from sufficiently sharp to amazingly so. My knives now go though meat like it was warm butter. And they go through warm butter like... soup? You get the picture. If you're even remotely considering Chef's Choice 120, get it now so you're ready for holiday cooking.
Note: I know this sounds silly, but follow the instructions carefully. Go gently, slowly, and watch out when you're done because your knives will be "wicked sharp"!!!

This sharpener does a decent job but it is far from exceptional . . . yet, the asking price would imply that it is exceptional. I actually put a much better edge on my knives with a stone than this sharpener does.

As soon as I got the sharpener I took out all the dull knives including those I was getting ready to relegate into the trash and after reading the instructions started to sharpen. Wow, what a really great item the 120 is. No more dull knives. They all sharpened up really great, and cut like new and probably better. No tricks, this really works! And easy to use!

I've sharpened knives for years with about every approach you can use. As a knife collector, I am pretty particular about sharpening. I was very impressed with the job this unit did, working through our entire collection of kitchen knives in a short period of time. It did a good job of returning some pretty old utility knives to a great edge, and sharpened knives in good condition in seconds. I was very pleased with this purchase, and glad to see the unit was made nearby in Avondale, PA.....made in the USA.

I have been hesitant about electric knife sharpeners as long as I can remember. Growing up, my dad had a large tri-stone sharpener in oil and always kept his knives razor sharp. I have never been able to manually sharpen a knife with great success. We use our kitchen knives every day and they had lost the factory edge despite regular honing. Ina Garten recommended this sharpener on one of her shows and in her cookbooks so we decided to try it. In about 10 minutes all our Henkels were razor sharp and all the hair was gone from the back of my left hand from testing the edge! The only negative is that a couple of our knives got scratches down the blade but I think it was part of the learning curve of how to hold them in the sharpener. The scratches certainly do not affect performance.
